Ingredients
Preparation time : 45 minutes
MAIN DISH
• 4 capon fillets
• Thyme
• Laurel
• 150 g gravy
• 8 baby turnips
• 60 g lamb’s lettuce
• Walnut oil
• 200 g fresh walnuts
JAM
• 50 g figs
• 50 g plums
• 50 g pears
• 50 g damson plums
• 25 g butter
• 10 g sugar
Step 1. Jam
1. Pit, peel and cut the fruits into large cubes
2. Let everything cook in foaming butter with a handful of sugar, put a lid on it and cook for 1 hour over low heat
3. Mix together
Step 2. Turnips
1. Peel and cut into 1cm-thick slices, then cut discs out of them with a small cookie cutter
2. Sweat them in foamy butter without browning them, season and deglaze with a splash of champagne. Put a lid on it and cook until obtaining a soft texture and liquid evaporation
Step 3. Capon
1. Season the capon fillets with salt & pepper, brown them skin-side down in a pan, add the butter & the herbs
2. Baste them during the cooking process
3. Heat up the gravy separately
4. Season the lamb’s lettuce with walnut oil and a splash of sherry vinegar
Step 4. Preparation
1. Draw a line of jam on the bottom of the plate, and place the roasted capon fillet onto it
2. Arrange 3 turnip discs harmoniously and add a spoonful of juice
3. Add the lamb's lettuce and fresh walnuts as an elegant finishing touch
